Fall Campfire-Roasted Apple Bannock Bread

Ingredients

  • 3 ½ cups white flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tbsp shortening
  • ¾ cup water
  • ¾ cup apple juice
  • ½ cup diced apple
  • 1 tbsp of sugar (optional)

Method

  1. Combine salt, flour and baking powder
  2. Cut in shortening until well mixed
  3. Add diced apple and sugar, toss
  4. Add both liquids and stir until combined (do not overmix)
     

Option 1

  • Divide dough into 8 to 10 strips and wrap each around a stick.
  • Cook over a campfire for about 10 minutes, turning regularly for even doneness.

Option 2

  • Divide dough into one or two large pieces or 8 smaller pieces.
  • In a cast iron pan over medium heat, cook until golden on both sides.
